It’s a sweet, but not too sweet recipe that’s loaded with nutritional benefits, thanks to the abundance of chia seeds. Pomegranates are also in season this time of year, and layering them with chia pudding, yogurt, and sliced almonds makes for one healthy and festive meal. It’s just a delightful little recipe! How To Make This Chia Pudding Parfait

First, make the chia pudding. Stir together the milk, chia seeds, maple syrup, and vanilla extract in a bowl. Let it rest for 10 minutes before stirring again. Cover the bowl and let it gel up in the fridge for at least an hour.

Then, assemble the parfait. Start with a layer of creamy yogurt, then add some sliced almonds, chia pudding, and pomegranate seeds. Then repeat!
Helpful tip: This is a great recipe to serve up buffet style and let people assemble their own during the holidays!

Storage Tips

For the chia pudding
- 1 cup almond milk (or other milk of choice)
- ¼ cup chia seeds
- 2 teaspoons maple syrup
- 1 teaspoon vanilla extract
For the parfaits
- ½ cup yogurt (dairy or dairy-free)
- ½ cup pomegranate seeds
- ¼ cup sliced almonds
Instructions
- To make the chia pudding: Stir together the almond milk, chia seeds, maple syrup, and vanilla extract together in a bowl. Let rest for 10 minutes, then stir again once the seeds have started to gel. Cover the bowl and place it in the fridge for at least one hour.
- To assemble the parfaits: Dollop yogurt in the bottom of a glass jar. Top that with a few spoonfuls of chia pudding, then a sprinkle of pomegranate seeds, a sprinkle of almond slices, more chia pudding, yogurt, and pomegranate seeds.
- Serve immediately or make the chia pudding parfaits ahead of time and place in the fridge until ready to serve.

Thanks for the inspiration for a new make ahead breakfast for myself and my family! I love your blog so! I can’t get pomegranate seeds for this batch, but have several homemade jams (many without sugar) that will certainly work. One “jam” we love around here is dried apricots cooked with lemon juice and a little water until soft, then puréed until it makes a smooth spread. You can do the same with many dried fruits, it’s especially nice when you need a fruit spread in a pinch.
