Why You’ll Love This Chia Parfait

If you’ve been following me for a while, you know that chia pudding is one of my favorite things to make (and meal prep). It’s a sweet, but not too sweet recipe that’s loaded with nutritional benefits, thanks to the abundance of chia seeds. Pomegranates are also in season this time of year, and layering them with chia pudding, yogurt, and sliced almonds makes for one healthy and festive meal. It’s just a delightful little recipe! Here are a few more reasons to love it:

  • It looks fancy: We all eat with our eyes first, and this chia parfait couldn’t be any prettier with those beautiful layers.
  • It’s seasonal and festive: I love to serve this for Christmas breakfast for a sweet option alongside my breakfast casserole for a savory option.
  • You can make it ahead: I’m always in search of make-ahead breakfast options that are healthy and easy, and this one ticks both boxes!

  8. I had some leftovers pomegranate seeds from the holidays and was trying to come up with an easy way to use them. This was the perfect recipe. 10. FYI- a triple batch of chia seed pudding perfectly fills a quart wide mouth mason jar.

Thanks for the inspiration for a new make ahead breakfast for myself and my family! I love your blog so! I can’t get pomegranate seeds for this batch, but have several homemade jams (many without sugar) that will certainly work. One “jam” we love around here is dried apricots cooked with lemon juice and a little water until soft, then puréed until it makes a smooth spread. You can do the same with many dried fruits, it’s especially nice when you need a fruit spread in a pinch. 5 stars

      1. Hi Vicky – You can always count on this chia pudding parfait for a healthy breakfast or snack!
