Fresh Summer Recipes for June Nights and Backyard Gatherings
June is such a wonderful time in Southern California. Summer is just warming up, and it’s when my cooking fully shifts into what I love cooking most: fresh, colorful, sunshine-y meals. The farmers market is overflowing, grilling season is in full swing, and all I want are summer salads, easy seafood dinners, and savory grilling recipes.
The recipes I’ve listed below feel both light and satisfying, and they’re ones I actually look forward to repeating.
You’ll also notice that there are lots of Mediterranean-inspired flavors in this roundup. Not so surprising if you’ve been following me a while. 😉 Think bright herbs, lemony dressings, grilled chicken, flaky fish, crunchy vegetables, and all the fresh summer ingredients piled into one big bowl or platter. So whether you’re planning easy weeknight dinners, healthy lunches, or recipes for entertaining friends, these are the June recipes I will gladly make all month long.
If you love a hearty salad that still feels fresh and summery, this steak salad checks every box. Perfectly grilled steak (or pan-seared ribeye steak) is layered over crisp greens with creamy avocado, tomatoes, cucumber, pickled red onions, and a punchy balsamic dressing.
This Niçoise salad feels like something you’d eat on a sunny patio overlooking the water. Between the jammy eggs, tender potatoes, green beans, olives, tuna, and Dijon vinaigrette, every bite is layered with texture and flavor. It’s elegant enough for entertaining, but simple enough to throw together for lunch on a warm afternoon.
This is one of my favorite fast summer dinners because it comes together SO quickly. The shrimp are coated in a garlicky herb marinade, then grilled until lightly charred and perfectly tender. They’re simple, flavorful, and made for warm evenings outside!
For those nights when you want something healthy, effortless, and reliable, this baked cod always delivers. The cod is flaky and tender with garlic, lemon, and fresh herbs (my favorite combo!).
Taco night starts looking a little fresher when the weather warms up. This taco salad is loaded with seasoned ground beef, crisp romaine, tomatoes, avocado, black beans, crunchy tortilla chips, and more. It has all the bold taco flavors you love, but in a lighter, fresher format that’s perfect for June dinners.
Bright herb sauces were made for summer cooking, and this chimichurri chicken proves it. The chicken is juicy and flavorful on its own, but the real magic is the fresh chimichurri sauce spooned over the top with parsley, cilantro, garlic, and red wine vinegar. It instantly makes dinner feel vibrant and exciting.
This is one of those salads I've been LOVING lately. It’s packed with crunchy vegetables, fresh herbs, and quinoa tossed in a bright lemony dressing. I especially love making a big batch for easy lunches throughout the week. It's durable enough for meal prep!
Nothing screams summer quite like chicken skewers sizzling on the grill. These Greek chicken souvlaki skewers are marinated in lemon, garlic, and herbs for the most vibrant flavor. I always serve them with tzatziki and a Greek salad, for an easy June dinner everyone will love.
These salmon tacos are fresh, colorful, and exactly the kind of easy meal I crave in June. Flaky salmon is tucked into tortillas with crunchy cabbage, and two sauces unexpectedly work so well: my salsa verde and creamy chipotle sauce!
These Greek chicken burgers are literally everything I want from a summer burger. They’re juicy, packed with Mediterranean flavors, and can be served as a lettuce burger or enjoyed on their own! Perfectly satisfying for cookouts and easy weeknight dinners.
